Poached Salmon

1 large piece of fresh salmon
Season with salt, lemon pepper & dash of Italian Seasoning
1 1/2cup fresh diced tomatoes
1/2 cup Sauvignon Blanc Cooking Wine (A 50/50 mixture of water & low sodium veg. broth will work-if using broth, cut the salt in the seasoning.)
3/4 tsp dried basil
1/2 cup shredded mozzarella or swiss cheese

Preheat oven to 350 degrees
Cover 9×13 baking pan with aluminum foil
Place salmon filet in pan and sprinkle with seasoning to taste. Cover with diced tomatoes. Pour wine over salmon. Sprinkle evenly with basil.
Bake for 20 to 25 minutes. Remove pan from oven and quickly sprinkle cheese over salmon. Bake for an additional 3 to 5 minutes or until cheese is melted and salmon is cooked to taste.
