Buttermilk Biscuits

3 cups flour
1 1/2 TBS sugar
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cream of tarter

Mix dry ingredients together in a big bowl with fingers or pastry cutter
Add 1/2 cup shortening (lard is best…but hard to find!)
Work shortening into flour mixture with fingers until the consistancy of corn meal.
1 cup (more or less) buttermilk added to flour mixture stirring with fork.
Kneed a few times on floured board. (Don’t over work the dough) Pat out so that dough is about 1/2 to 3/4 inch high.

Cut out biscuits. Punch small indention in middle of each biscuit. Paint with butter. Place on cookie sheet (sprayed lightly with Pam) in 425 degree oven for about 12 minutes.
