Artichoke Nibbles

2 jars (6 oz each) marinated artichoke hearts
1 small onion, finely chopped
1 clove garlic, minced or pressed
1/4 cup fine dry crumbs
4 eggs
1/4 tsp salt
1/8 tsp each: pepper, oregano leaves, and tabasco sauce
2 cups shredded cheese
2 TBS minced parsley (optional)
Drain marinade from 1 jar into frying pan. Drain the other jar reserving marinade for later. Chop all artichokes–set aside. Heat marinade over med heat, adding onion and garlic. Cook stirring until onion is soft.
Beat eggs. Stir in bread crumbs, salt, pepper, oregano, tabasco, cheese artichokes, parsley and onion mixture. Turn into greased 7×11 baking pan.

Bake 325 degrees in oven for 30 minutes or until set when touched in center. Let cool slightly. Cut into 1 inch squares. Serve warm, room temperature or cold. Makes about 6 dozen small bites.
