1-2lbs ground beef
1 can chopped green chilies
12-15 corn tortillas
2 cups grated Mexican style cheese
Olive oil
1 can pinto beans(optional)
1 big 28oz can (Divided) Hatch’s enchilada sauce, Las Palmas will do if Hatch is not available~
Brown ground beef and drain. Add a small part of your enchilada sauce to your beef, your can of green chili, and your beans in a saucepan to simmer. In a frying pan or skillet warm olive oil and fry each side of your corn tortillas and set aside on paper towel. Make a few extra for helpers that pass by. After frying tortillas, place beef mixture and a little cheese in each tortilla, roll and place in 9×13 pan. Pour the rest of enchilada sauce over the top of rolled enchiladas and top with the rest of the cheese.
Bake 350 F for 25-30 minutes
