1 refrigerated pie crust (or homemade)
2 tablespoons butter
2 cups coarsely chopped red onion
1 cup chopped apple
2 eggs
1/2 cup sour cream
1/4 tsp salt
1/8 tsp red pepper sauce
3/4 cup finely shredded cheddar cheese, divided
Instuctions:
Preheat oven to 400 degrees.
Place crust into 10 inch tart pan and bake 10-12 minutes.
Meanwhile in 10 inch skillet, melt butter . Cook 1 cup onion in butter for 5 minutes, stirring occsionally. Reduce heat to medium, add apple. Cook about 15 minutes, stirring occasionally, until onion and apple are softened and golden brown; remove from heat.
In large bowl, beat eggs. Stir in sour cream, salt and pepper sauce. Stir in onion-apple mixture. Stir in 1/4 cup of cheese. Spoon onion-apple mixture into crust. Sprinkle with remaining cheese.
Bake 15-20 minutes or until golden brown and set in center.
Serve warm or at room temperature.
